Peel the cassava properly by removing the thick brown skin and the pinkish layer underneath.
Wash the peeled cassava thoroughly.
Remove the fibrous center if present.
Grate the cassava until you have approximately 2½ cups.
In a mixing bowl, combine the grated cassava and glutinous rice flour.
Mix until evenly combined.
Scoop approximately 1 tablespoon of the mixture and roll into smooth balls.
Heat enough cooking oil over medium-low heat.
Fry the cassava balls until golden brown and cooked through.
Remove and transfer to a plate.
Using the same pan with the same oil remaining, add the brown sugar.
Cook over medium-low heat until the sugar melts and turns into caramel.
Immediately add the fried cassava balls.
Toss gently until evenly coated with caramel.
Turn off the heat.
Transfer to a serving plate.
Insert bamboo skewers if desired.
Serve warm and enjoy.
