Homemade Crepes Recipe - Perfect Soft Crepes Made Easy

For the Batter
- 1½ cups all-purpose flour
- 1 can evaporated milk 390 grams or slightly over 1⅓ cups
- ½ teaspoon salt
- 4 tablespoons white sugar
- 1 cup water room temperature
- ¼ teaspoon baking soda
- 2 large eggs

- Powdered sugar
Yield: 11–12 crepes
Prepare the Soda Water
In a small bowl, combine the room temperature water and baking soda.
Stir until completely dissolved and set aside.
Make the Batter
In a large mixing bowl, combine the all-purpose flour, salt, and sugar. Add the evaporated milk, eggs, and the prepared soda water. Mix thoroughly using a balloon whisk until smooth.
Pour the batter through a strainer to remove any lumps. The batter should be thin and pourable. If it feels too thick, the finished product will resemble pancakes rather than crepes.
Cook the Crepes
Heat a non-stick frying pan over medium heat. Lightly coat the surface with a small amount of butter.
Pour about ⅓ cup of batter into the center of the pan. Immediately tilt and rotate the pan so the batter spreads into a thin circle.
Cook until the edges begin turning light brown and release from the pan. Flip carefully and cook the opposite side for a few seconds until done.
Repeat with the remaining batter.
