Homemade Mayonnaise Recipe (Keto & Healthy Version)

This homemade mayonnaise recipe is creamy, rich, and incredibly easy to make using just a food processor. It uses simple ingredients like egg yolks, lemon juice, and olive oil to create a thick and smooth mayo that is perfect for sandwiches, dips, and salads. Unlike commercial mayonnaise, this version is healthier, keto-friendly, and free from preservatives. You can also customize it by adding cheese, onions, tuna, or herbs for extra flavor.

Ingredients

  • 1 cup olive oil
  • 2 tbsp lemon juice
  • 2 to 3 egg yolks preferably pasteurized
  • ½ to 1 tbsp granulated sugar or keto sweetener Stevia / Equal Gold
  • ¼ tsp salt
  • Pinch of ground black pepper

Optional add-ins for flavor:

  • Grated cheese
  • Spring onions or leeks
  • Tuna flakes
  • Chopped boiled eggs
  • Finely chopped onions

Instructions

  • Add egg yolks and lemon juice into a food processor. Blend for about 30 seconds until well combined.
  • Slowly pour in olive oil while the machine is running. Start with about ¼ cup until the mixture begins to thicken slightly.
  • Continue adding the remaining olive oil very slowly. As it emulsifies, the mixture will turn creamy and thick. You may notice the sound of the blender changing as the mayo forms.
  • Once all oil is incorporated, add sugar (or keto sweetener), salt, and ground black pepper. Blend again for about 1 minute until smooth.
  • Transfer to a clean container. Your homemade mayonnaise is now ready to serve or store in the refrigerator.
