Prepare the Beef Patties
In a bowl, combine the ground beef, chopped onion, salt, black pepper, and egg. Mix until evenly combined.
Divide the mixture into 3 equal portions and shape them into burger patties.
Heat a lightly oiled frying pan over medium heat and cook the patties until fully cooked and nicely browned on both sides. Set aside.
Make the Cloud Bread
In a mixing bowl, combine the softened cream cheese, egg yolks, keto-friendly sugar substitute, and salt. Beat using an electric mixer until smooth and creamy.
In a separate clean bowl, combine the egg whites, cream of tartar, and baking powder. Beat until soft peaks form. Add the keto-friendly sugar substitute and continue beating until stiff peaks form.
Add a small amount of the egg white mixture into the cream cheese mixture and gently fold to combine.
Gradually fold the remaining egg white mixture into the cream cheese mixture. Use a folding motion to maintain as much air as possible.
Divide the batter into 6 portions on a parchment-lined baking tray.
Preheat the oven to 180°C.
Bake for 16 to 18 minutes or until lightly golden.
Allow the cloud bread to cool completely before assembling the burgers.
Make the Creamy Mustard Dressing
Place the pasteurized egg, mustard, and lemon juice into a food processor.
Process until combined.
While the processor is running, slowly drizzle in about ¾ cup of olive oil.
Add the remaining olive oil and continue blending until the mixture becomes thick and creamy.
Add the salt and keto-friendly sugar substitute.
Blend for another minute until smooth.
Transfer to a squeeze bottle or airtight container.
Assemble the Keto Burger
Place one piece of cloud bread on a serving plate.
Spread some creamy mustard dressing and cream cheese.
Add lettuce, cucumber, tomato, cheddar cheese, beef patty, and fried egg.
Top with another piece of cloud bread.
Serve immediately and enjoy.
