Ingredients

For the Dough

  • cups all-purpose flour
  • cups bread flour
  • cup white sugar
  • ½ teaspoon table salt
  • ¾ cup evaporated milk
  • 1 large egg
  • 3 tablespoons vegetable shortening do not melt. Butter may be substituted, but vegetable shortening is highly recommended for a softer and fluffier bread.

Yeast Mixture

  • teaspoons instant dry yeast
  • ¼ cup warm water
  • 1 tablespoon white sugar

Filling

  • Cheddar cheese sticks

Butter Topping

  • 40 grams butter softened
  • 1 tablespoon evaporated milk
  • Powdered sugar or white sugar

Instructions

Step 1. Bloom the Yeast

  • In a small bowl, combine the warm water, sugar, and yeast. Let it sit for 5 to 10 minutes until it becomes foamy.

Step 2. Prepare the Dry Ingredients

  • In a large bowl, combine the all-purpose flour, bread flour, sugar, and salt. Mix until evenly combined.

Step 3. Add the Wet Ingredients

  • Pour in the evaporated milk, egg, and bloomed yeast mixture.
  • Mix until no dry flour remains.

Step 4. Add the Shortening

  • Add the vegetable shortening and continue mixing until incorporated.

Step 5. Knead the Dough

  • Transfer the dough onto your work surface.
  • Knead for 10 to 15 minutes until the dough becomes smooth, soft, and elastic.

Step 6. First Proof

  • Place the dough in a lightly greased bowl.
  • Cover and let it rise for about 1 to 2 hours or until doubled in size.

Step 7. Divide the Dough

  • Punch down the dough.
  • Divide into 14 equal pieces, approximately 60 grams each.
  • Shape each piece into a smooth dough ball.

Step 8. Prepare the Cheese

  • Cut the cheddar cheese into sticks if needed.

Step 9. Prepare the Baking Pan

  • Lightly grease your baking pan with cooking oil.

Step 10. Shape the Cheese Rolls

  • Flatten each dough ball using a rolling pin.
  • Place one cheese stick in the center.
  • Roll tightly and pinch the seam together. Also pinch both ends securely to prevent the cheese from leaking during baking.

Step 11. Second Proof

  • Cover and let the dough rise again for 30 minutes.
  • Meanwhile, preheat your oven.

Step 12. Bake

  • Bake in a preheated oven at 170°C (338°F) for 18 to 20 minutes, or until lightly golden.

Step 13. Prepare the Butter Topping

  • Using an electric mixer, beat the softened butter until light and fluffy.
  • Add the evaporated milk and beat again until smooth and creamy.

Step 14. Finish

  • Allow the bread to cool slightly.
  • Spread the butter mixture over each bread.
  • Generously coat with powdered sugar or white sugar.
