Pork Liempo Ensalada Recipe

A flavorful Filipino-style grilled pork liempo served with a refreshing cucumber and onion salad dressed in vinegar, calamansi juice, sugar, and spices. A perfect balance of smoky, savory, and tangy flavors, ideal for rice meals or pulutan.

Ingredients

Dry Marinade

  • 2 kg pork liempo
  • 2 tbsp salt
  • 2 tbsp garlic powder
  • 1.5 tsp ground black pepper

Ensalada

  • 2 medium cucumbers sliced
  • 3 medium to large onions sliced
  • 2 tsp salt adjust to taste
  • 2 tsp sugar
  • 5-6 tbsp vinegar Ilocos cane vinegar recommended
  • 4 pcs calamansi juiced
  • 1 tsp ground black pepper

Instructions

Prepare the Pork Liempo

  • Rub the pork liempo with salt, garlic powder, and black pepper. Let it marinate for at least 30 minutes to 2 hours for better flavor.

Grill the Liempo

  • Grill over medium heat until fully cooked and nicely charred on the outside. Flip occasionally for even cooking.

Rest and Slice

  • Let the grilled liempo rest for a few minutes before slicing into serving pieces.

Prepare the Ensalada

  • In a bowl, combine cucumber and onions. Add salt, sugar, vinegar, calamansi juice, and black pepper. Mix well.

Serve

  • Serve the grilled pork liempo topped with the ensalada or mix together before serving.
