Pork Liempo Ensalada Recipe
A flavorful Filipino-style grilled pork liempo served with a refreshing cucumber and onion salad dressed in vinegar, calamansi juice, sugar, and spices. A perfect balance of smoky, savory, and tangy flavors, ideal for rice meals or pulutan.
Dry Marinade
- 2 kg pork liempo
- 2 tbsp salt
- 2 tbsp garlic powder
- 1.5 tsp ground black pepper
Ensalada
- 2 medium cucumbers sliced
- 3 medium to large onions sliced
- 2 tsp salt adjust to taste
- 2 tsp sugar
- 5-6 tbsp vinegar Ilocos cane vinegar recommended
- 4 pcs calamansi juiced
- 1 tsp ground black pepper
Prepare the Ensalada
In a bowl, combine cucumber and onions. Add salt, sugar, vinegar, calamansi juice, and black pepper. Mix well.
